Recipe Challenge for Horror October

DSC_1099

I am so excited to be participating in my first blog challenge! I missed the first week of Horror October, but plan on participating the other weeks! It is hosted by one of my favorite bookstagrammers and bloggers, Novel Heartbeat! This weeks challenge was for a fall recipe! I most definitely had to do something with pumpkin. I chose to make pumpkin donuts! I found this recipe on Made to be a Momma’s blog!

Thoughts: THESE WERE DELICIOUS!! Definitely a new fall favorite!

Recipe

Mini Pumpkin Donuts

Servings 48

Ingredients:

  • Yellow Cake Mix such as Betty Crocker
  • 1 15 oz. can pumpkin puree I use Libby’s
  • 1 tsp. vanilla extract
  • 1/2 tsp. pumpkin pie spice
  • 1/2 tsp. cinnamon
  • 2 Tbsp. melted butter optional
  • Cinnamon and Sugar Mixture optional
  • Powdered Sugar optional

Instructions:

  1. Mix together all ingredients in a stand mixture until well combined. Place batter in a piping bag and cut the end of the tip off. Squeeze batter into mini muffin tin, filling it half way. Bake at 400 degrees for 5-7 minutes. If serving right away frost as desired.
  2. For the frosting you can either dust the tops of the mini donuts with powdered sugar or you can dip the tops of the donuts in melted butter and then immediately into the cinnamon and sugar mixture. I recommend frosting the donuts as you need them as the butter can make the donuts soggy after a few hours.

*Personal Tip: I just used a regular baggy and cut the end off, worked just as well! My oven took longer to bake theses, more like 10 minutes. Also, I used a regular donut pan and they made about 18.

What are some of your favorite fall recipes?! Do you eat while reading? I do!

Next weeks challenge is a horror movie challenge! Can’t wait!

Happy Adventuring

I have loved reading ever since I can remember. As a child, I often heard the words, "Please put down your book for one second!" That still hasn't changed as an adult! I am always reading at least two books and I will always have one on me!
